  • 6 slices bacon, chopped
  • 2 jalapenos, seeded and diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup panko breadcrumbs

Instructions

  • Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
  • Add the diced jalapenos to the skillet with the bacon drippings and sauté for 2-3 minutes until softened. Remove from the skillet and set aside.
  • In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  • Gradually whisk in the milk and cook, stirring constantly, until the mixture thickens and comes to a simmer.
  • Remove the skillet from the heat and stir in the shredded cheddar cheese until melted. Season with salt, black pepper, and cayenne pepper.
  • Add the cooked macaroni, crispy bacon, and sautéed jalapenos to the cheese sauce, stirring to combine. Transfer the mixture to the prepared baking dish.
  • In a small bowl, mix the panko breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture over the mac and cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the top is golden and the cheese is bubbly.
  • Allow to cool for a few minutes before serving. Enjoy!
