Instructions

  • Preheat a skillet over medium heat.
  • Cook the bacon until crispy, then transfer to a paper towel-lined plate to drain. Leave the bacon fat in the skillet.
  • In a bowl, whisk the eggs and season with salt and pepper.
  • Melt 1 tablespoon of butter in the skillet with the bacon fat.
  • Pour the eggs into the skillet and cook, stirring occasionally, until they are softly set.
  • Slice the croissants in half and place them on a baking sheet. Toast them in the oven at 350°F for 3-5 minutes, until lightly golden.
  • Divide the scrambled eggs onto the bottom halves of the croissants.
  • Top each with 2 slices of bacon and 1/4 cup of shredded cheddar cheese.
  • Place the croissant tops on the sandwiches and return them to the oven for 2-3 minutes, until the cheese is melted.
  • Serve the sandwiches warm and enjoy!
