  • 2 tablespoons chopped fresh parsley

Instructions

  • Preheat the broiler in your oven.
  • In a 10-inch non-stick, oven-safe skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes.
  • Add the diced onion and red bell pepper to the skillet with the bacon and cook for an additional 3-4 minutes, until the vegetables are softened.
  • In a large bowl, whisk together 8 eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Pour the egg mixture into the skillet with the bacon and vegetables. Cook over medium heat, lifting the edges of the frittata with a spatula to let the uncooked egg flow underneath, until the edges are set but the center is still slightly runny, about 5-7 minutes.
  • Sprinkle 1 cup of shredded cheddar cheese over the top of the frittata and place the skillet under the broiler. Broil for 2-3 minutes, until the top is golden and the center is set.
  • Remove the skillet from the oven and let it cool for a few minutes. Sprinkle 2 tablespoons of chopped fresh parsley over the top of the frittata.
  • Slice the frittata into wedges and serve hot. Enjoy!
