Ingredients
- 4 large baking potatoes
- 6 slices of bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons butter
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes and pierce them with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
- Remove the potatoes from the oven and let them cool for 10 minutes. Reduce the oven temperature to 350°F (175°C).
- Cut the potatoes in half lengthwise and scoop out the flesh into a large bowl, leaving a thin shell. Place the potato shells on a baking sheet.
- Mash the potato flesh with sour cream, butter, milk, salt, and pepper until smooth. Stir in 3/4 of the crumbled bacon, 3/4 of the cheddar cheese, and 3/4 of the green onions.
- Divide the mixture evenly among the potato shells. Sprinkle the remaining bacon, cheddar cheese, and green onions on top of each potato.
- Bake for 15-20 minutes, or until the cheese is melted and the potatoes are heated through.
