  • Remove the potatoes from the oven and let them cool for 10 minutes. Reduce the oven temperature to 350°F (175°C).
  • Cut the potatoes in half lengthwise and scoop out the flesh into a large bowl, leaving a thin shell. Place the potato shells on a baking sheet.
  • Mash the potato flesh with sour cream, butter, milk, salt, and pepper until smooth. Stir in 3/4 of the crumbled bacon, 3/4 of the cheddar cheese, and 3/4 of the green onions.
  • Divide the mixture evenly among the potato shells. Sprinkle the remaining bacon, cheddar cheese, and green onions on top of each potato.
  • Bake for 15-20 minutes, or until the cheese is melted and the potatoes are heated through.
