Bacon and Cheddar Stuffed Mushrooms Wrapped in Crispy Bacon

Ingredients
- 12 large mushrooms, stems removed and reserved
- 6 slices of bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 6 slices of bacon, uncooked
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Chop the reserved mushroom stems and cook them in a skillet over medium heat until softened, about 5 minutes. Remove from heat and let cool.
- In a bowl, combine the cooked and crumbled bacon, cheddar cheese, Parmesan cheese, parsley, garlic powder, and the cooked mushroom stems. Season with salt and pepper.
- Stuff each mushroom cap with the bacon and cheese mixture, mounding it slightly.
- Wrap each stuffed mushroom with a slice of uncooked bacon and secure with a toothpick. Place the mushrooms on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the mushrooms are tender.
- Remove from the oven and let cool for a few minutes before serving. Enjoy!
