Instructions

  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
  • In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  • Gradually whisk in the milk and cook, stirring constantly, until the mixture thickens.
  • Stir in 1 1/2 cups of the shredded cheddar cheese until melted and smooth. Season with salt, pepper, and paprika.
  • Add the cooked macaroni to the cheese sauce and stir to combine. Pour the mixture into the prepared baking dish.
  • In a small bowl, mix the remaining 1/2 cup of shredded cheddar cheese with the breadcrumbs. Sprinkle the mixture over the macaroni and cheese.
