Instructions

  • In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of stone-ground grits and 1 teaspoon of salt. Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
  • While the grits are cooking, in a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and place it on a paper towel to drain.
  • Once the grits are cooked, stir in 2 tablespoons of butter, 1 cup of shredded cheddar cheese, and 1/4 teaspoon of black pepper until the cheese is melted and the mixture is creamy.
  • Divide the grits into serving bowls and top with the crispy bacon. Serve hot and enjoy!
