  • 1/4 teaspoon of black pepper
  • 1 tablespoon of lemon juice
  • 2 tablespoons of grated Parmesan cheese

Instructions

  • Preheat the oven to 375 degrees F.

  • Place the avocado halves in a baking dish, cut side up. Squeeze a little lemon juice over each avocado half.
  • Divide the sautéed spinach among the avocado halves, creating a small well in the center for the eggs.
  • Carefully crack an egg into each avocado half, making sure not to overflow.
  • Sprinkle the grated Parmesan cheese over the eggs and avocados.
  • Bake in the preheated oven for 12-15 minutes, or until the egg whites are set and the yolks are still slightly runny.

Avocado Florentine is a delightful twist on the classic Eggs Florentine, featuring creamy avocado in place of the traditional English muffin. This dish originated in the vibrant culinary scene of California, where chefs sought to infuse the beloved Florentine with a fresh, healthy twist. The rich, buttery texture of ripe avocados perfectly complements the creamy poached egg and velvety hollandaise sauce, creating a harmonious blend of flavors. Today, the best versions of this dish can be found in trendy brunch spots and health-conscious cafes across California. To make the perfect Avocado Florentine, it's crucial to use perfectly ripe avocados and master the art of poaching eggs to achieve that ideal runny yolk. For a unique twist, some chefs also incorporate fresh spinach or kale into the dish, adding a nutritious boost and a pop of vibrant green color. Whether you're a brunch enthusiast or an avocado aficionado, Avocado Florentine is a must-try dish that perfectly captures the essence of California's innovative culinary spirit.
