Ingredients
- 2 ripe avocados
- 4 eggs
- 2 cups of fresh spinach
- 1 tablespoon of olive oil
- 1 clove of garlic, minced
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of lemon juice
- 2 tablespoons of grated Parmesan cheese
Instructions
- Preheat the oven to 375 degrees F.
- Cut the avocados in half and remove the pits. Scoop out a little extra flesh from each half to create a larger well for the eggs.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper.
- Place the avocado halves in a baking dish, cut side up. Squeeze a little lemon juice over each avocado half.
- Divide the sautéed spinach among the avocado halves, creating a small well in the center for the eggs.
- Carefully crack an egg into each avocado half, making sure not to overflow.
- Sprinkle the grated Parmesan cheese over the eggs and avocados.
- Bake in the preheated oven for 12-15 minutes, or until the egg whites are set and the yolks are still slightly runny.
