  • Cut the avocados in half and remove the pits. Scoop out a little extra flesh from each half to create a larger well for the eggs.
  • In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  • Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper.
  • Place the avocado halves in a baking dish, cut side up. Squeeze a little lemon juice over each avocado half.
  • Divide the sautéed spinach among the avocado halves, creating a small well in the center for the eggs.
  • Carefully crack an egg into each avocado half, making sure not to overflow.
  • Sprinkle the grated Parmesan cheese over the eggs and avocados.
  • Bake in the preheated oven for 12-15 minutes, or until the egg whites are set and the yolks are still slightly runny.
