Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 ripe avocados, sliced
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  • In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of cumin, 1 teaspoon of paprika, and salt and pepper to taste.
  • Brush the chicken breasts with the spice mixture and grill over medium-high heat for 5-6 minutes per side, or until cooked through. Remove from heat and let rest for 5 minutes before slicing into strips.
  • Warm the flour tortillas in a dry skillet over medium heat for 30 seconds on each side.
  • Divide the sliced chicken, avocado, lettuce, tomatoes, red onion, cilantro, and cheddar cheese evenly among the tortillas.
  • Drizzle each wrap with 1 tablespoon of sour cream and 1 tablespoon of salsa.
  • Fold in the sides of the tortilla and then roll up tightly from the bottom, tucking in the filling as you go.
  • Serve immediately, or wrap in foil and refrigerate for later. Enjoy!
