Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 large flour tortillas
- 2 ripe avocados, sliced
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions
- In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of cumin, 1 teaspoon of paprika, and salt and pepper to taste.
- Brush the chicken breasts with the spice mixture and grill over medium-high heat for 5-6 minutes per side, or until cooked through. Remove from heat and let rest for 5 minutes before slicing into strips.
- Warm the flour tortillas in a dry skillet over medium heat for 30 seconds on each side.
- Divide the sliced chicken, avocado, lettuce, tomatoes, red onion, cilantro, and cheddar cheese evenly among the tortillas.
- Drizzle each wrap with 1 tablespoon of sour cream and 1 tablespoon of salsa.
- Fold in the sides of the tortilla and then roll up tightly from the bottom, tucking in the filling as you go.
- Serve immediately, or wrap in foil and refrigerate for later. Enjoy!
