Instructions

  • In a large skillet, cook 4 slices of turkey bacon over medium heat until crispy. Remove from the skillet and set aside.
  • In the same skillet, add 1 tablespoon of olive oil. Crack 4 large eggs into the skillet and sprinkle with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Cook until the eggs are set, about 2-3 minutes. Remove from the skillet and set aside.
  • Place 2 large whole wheat tortillas on a clean surface. Divide the sliced avocado, cooked turkey bacon, and scrambled eggs between the two tortillas. Sprinkle 1/2 cup of shredded cheddar cheese over the fillings.
  • Fold the sides of the tortillas over the fillings, then roll them up tightly to create a wrap.
