Ingredients
- 1 cup cooked black beans
- 2 ripe avocados, peeled and diced
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions
- In a medium bowl, mash the cooked black beans with a fork. Add the diced avocados, tomatoes, red onion, cilantro, cumin, chili powder, salt, and black pepper. Mix well to combine.
- Lay out the flour tortillas and divide the avocado and black bean mixture evenly among them, spreading it down the center of each tortilla. Sprinkle each with 1/4 cup of shredded cheddar cheese.
- Fold in the sides of the tortillas and then roll them up tightly to form burritos.
- Heat a large non-stick skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Serve the burritos with a dollop of sour cream and a spoonful of salsa on top. Enjoy!
