Instructions

  • In a medium bowl, mash the cooked black beans with a fork. Add the diced avocados, tomatoes, red onion, cilantro, cumin, chili powder, salt, and black pepper. Mix well to combine.
  • Lay out the flour tortillas and divide the avocado and black bean mixture evenly among them, spreading it down the center of each tortilla. Sprinkle each with 1/4 cup of shredded cheddar cheese.
  • Fold in the sides of the tortillas and then roll them up tightly to form burritos.
  • Heat a large non-stick skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
