  • Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly to prevent lumps from forming.
  • Once the atole begins to simmer, reduce the heat to low and continue to cook for 10-15 minutes, stirring occasionally, until the mixture thickens to the desired consistency.
  • Remove the saucepan from the heat and discard the cinnamon stick.
  • Stir in 1 teaspoon of vanilla extract.
  • Pour the atole into mugs and sprinkle with ground cinnamon if desired.
  • Serve hot and enjoy!
