Instructions

  • In a medium saucepan, combine 1 cup of white rice, 4 cups of whole milk, 1/2 cup of sugar, and 1 cinnamon stick. Bring to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  • Once the rice is tender and the mixture has thickened, remove the cinnamon stick and stir in 1 teaspoon of vanilla extract. Remove from heat and let it cool for 10 minutes.
  • While the rice pudding is cooling, prepare the caramelized almonds. In a small skillet, heat 1/4 cup of granulated sugar over medium heat. Once the sugar starts to melt and turn golden, add 1/2 cup of slivered almonds. Stir constantly until the almonds are coated in caramel, then transfer them to a parchment-lined baking sheet to cool and harden.
