  • 1/4 cup ice water
  • 1/2 cup almond meal
  • 1/4 cup powdered sugar
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon vanilla extract
  • 6-8 ripe apricots, pitted and sliced
  • 1 tablespoon apricot preserves
  • 1 pint vanilla ice cream

Instructions

  • In a food processor, combine 1 1/2 cups of flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  • While pulsing, drizzle in the ice water until the dough comes together. Be careful not to overmix. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together 1/2 cup of almond meal, 1/4 cup of powdered sugar, 1/4 teaspoon of almond extract, and 1/4 teaspoon of vanilla extract to make the almond filling.
  • On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a parchment-lined baking sheet.
  • Spread the almond filling evenly over the dough, leaving a 2-inch border. Arrange the sliced apricots on top of the almond filling. Fold the edges of the dough over the apricots, creating a rustic tart.
