Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 1/2 cup almond meal
- 1/4 cup powdered sugar
- 1/4 teaspoon almond extract
- 1/4 teaspoon vanilla extract
- 6-8 ripe apricots, pitted and sliced
- 1 tablespoon apricot preserves
- 1 pint vanilla ice cream
Instructions
- In a food processor, combine 1 1/2 cups of flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- While pulsing, drizzle in the ice water until the dough comes together. Be careful not to overmix. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together 1/2 cup of almond meal, 1/4 cup of powdered sugar, 1/4 teaspoon of almond extract, and 1/4 teaspoon of vanilla extract to make the almond filling.
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a parchment-lined baking sheet.
- Spread the almond filling evenly over the dough, leaving a 2-inch border. Arrange the sliced apricots on top of the almond filling. Fold the edges of the dough over the apricots, creating a rustic tart.
- Bake for 30-35 minutes, or until the crust is golden brown and the apricots are tender. Remove from the oven and let cool for 10 minutes.
- While the tart is cooling, warm 1 tablespoon of apricot preserves in the microwave for 20 seconds. Brush the warm preserves over the apricots for a glossy finish.
- Slice the tart and serve with a scoop of vanilla ice cream on the side. Enjoy!
