  • In a separate bowl, mix together 1/2 cup of melted butter, 2 eggs, 1 cup of milk, and 1 teaspoon of vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in 1 1/2 cups of diced apples.
  • Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  • In a small bowl, prepare the streusel topping by combining 1/4 cup of granulated sugar, 1/4 cup of all-purpose flour, 1/2 teaspoon of ground cinnamon, and 2 tablespoons of melted butter. Mix until crumbly, then sprinkle the streusel over the muffin batter in the cups.
