Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder

- 1 1/2 cups diced apples (such as Granny Smith or Honeycrisp)
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick cooking spray.
- In a large bowl, whisk together 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1 teaspoon of ground cinnamon.
- In a separate bowl, mix together 1/2 cup of melted butter, 2 eggs, 1 cup of milk, and 1 teaspoon of vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in 1 1/2 cups of diced apples.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- In a small bowl, prepare the streusel topping by combining 1/4 cup of granulated sugar, 1/4 cup of all-purpose flour, 1/2 teaspoon of ground cinnamon, and 2 tablespoons of melted butter. Mix until crumbly, then sprinkle the streusel over the muffin batter in the cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.
