Ingredients
- 4 slices of bacon
- 4 large eggs
- 1 cup of all-purpose flour
- 2 tablespoons of granulated sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 cup of milk
- 1 large egg
- 2 tablespoons of melted butter
- Butter and maple syrup for serving
Instructions
- In a large skillet, cook 4 slices of bacon over medium heat until crispy. Remove from the skillet and place on a paper towel-lined plate to drain. Keep the bacon fat in the skillet for cooking the eggs.
- In a medium bowl, whisk together 1 cup of flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- In a separate bowl, whisk together 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 5 minutes.
- While the pancake batter is resting, crack 4 large eggs into the skillet with the bacon fat and cook to your desired doneness.
- Heat a non-stick griddle or skillet over medium heat and lightly grease with butter. Pour 1/4 cup of batter for each pancake onto the griddle and cook until bubbles form on the surface. Flip and cook until golden brown on the other side. Repeat with the remaining batter.
- Serve the pancakes with the cooked bacon, eggs, and a pat of butter. Drizzle with maple syrup and enjoy!
