Honey and Orange Blossom Water Almond Baklava

Ingredients
- 1 package of phyllo pastry sheets, thawed
- 1 1/2 cups of unsalted butter, melted
- 3 cups of almonds, finely chopped
- 1/2 cup of white sugar
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground cloves
- 1 cup of honey
- 1/2 cup of water
- 2 tablespoons of orange blossom water
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together 3 cups of finely chopped almonds, 1/2 cup of white sugar, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground cloves.
- Brush a 9x13 inch baking dish with melted butter. Place a sheet of phyllo pastry in the dish and brush with melted butter. Repeat with 7 more sheets of phyllo, brushing each with butter.
- Sprinkle a thin layer of the almond mixture over the phyllo in the dish.
- Layer 8 more sheets of phyllo, brushing each with butter, and sprinkle with almond mixture. Repeat this process until all the almond mixture is used, ending with a top layer of 8 sheets of phyllo, each brushed with butter.
- Using a sharp knife, cut the baklava into diamond or square shapes, being careful not to cut all the way through to the bottom.
- Bake in the preheated oven for 45 minutes, or until golden brown and crisp.
- While the baklava is baking, combine 1 cup of honey, 1/2 cup of water, and 2 tablespoons of orange blossom water in a saucepan. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- When the baklava is done, remove it from the oven and immediately pour the hot honey syrup over the top, allowing it to soak into the cuts and around the edges of the baklava.
- Allow the baklava to cool completely before serving. Enjoy!
