  • 1/2 fresh pineapple, peeled, cored, and sliced
  • 8 small corn tortillas
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

  • In a large bowl, combine the pineapple juice, orange juice, minced garlic, ground cumin, paprika, dried oregano, ground cinnamon, salt, and pepper.
  • Add the thinly sliced pork shoulder to the marinade, making sure it is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  • Preheat a grill or grill pan over medium-high heat. Grill the marinated pork slices for 3-4 minutes on each side, or until cooked through and slightly charred. Remove from the grill and let rest for a few minutes.
  • While the pork is resting, grill the pineapple slices for 2-3 minutes on each side, until they have grill marks and are slightly caramelized. Remove from the grill and set aside.
  • Warm the corn tortillas on the grill for about 30 seconds on each side.
  • To assemble the tacos, place a few slices of grilled pork on each tortilla, top with a grilled pineapple slice, red onion, and chopped cilantro. Squeeze a lime wedge over each taco before serving.
