  • 3 dried ancho chilies, stemmed and seeded
  • 1/4 cup white vinegar
  • 2 tablespoons achiote paste
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 12 small corn tortillas
  • 1/2 cup chopped cilantro
  • 1/2 cup diced onion
  • Lime wedges, for serving

Instructions

  • In a large bowl, combine the pork, pineapple, onion, garlic, guajillo chilies, ancho chilies, vinegar, achiote paste, oregano, cumin, salt, and black pepper. Mix well to coat the pork. Cover and refrigerate for at least 2 hours, or overnight.
  • Preheat the grill to medium-high heat. Thread the marinated pork and pineapple onto skewers. Grill for 10-15 minutes, turning occasionally, until the pork is cooked through and the pineapple is charred.
  • Remove the pork and pineapple from the skewers and chop into small pieces.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the chopped pork and pineapple mixture and cook for 5-7 minutes, until slightly caramelized.
  • Warm the tortillas on the grill or in a dry skillet for about 30 seconds on each side.
  • To assemble the tacos, place a spoonful of the pork and pineapple mixture onto each tortilla. Top with chopped cilantro, diced onion, and a squeeze of lime juice.
