Ingredients

  • 6 egg yolks
  • 1 cup of granulated sugar
  • 1 cup of brandy
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of freshly grated nutmeg
  • 1/2 cup of heavy cream

Instructions

  • In a heatproof bowl, whisk together 6 egg yolks and 1 cup of granulated sugar until well combined.
  • Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Cook, stirring constantly, for about 5-7 minutes or until the mixture thickens and coats the back of a spoon.
  • Remove the bowl from the heat and let it cool to room temperature.
  • Once cooled, stir in 1 cup of brandy, 1 teaspoon of vanilla extract, and 1/2 teaspoon of freshly grated nutmeg.
  • In a separate bowl, whip 1/2 cup of heavy cream until soft peaks form. Gently fold the whipped cream into the egg mixture until well combined.
  • Transfer the Advocaat to a clean, airtight container and refrigerate for at least 2 hours before serving.
  • Serve chilled and enjoy on its own or use in cocktails.
