Adobong Pusit, a popular Filipino dish, has a rich history dating back to the Spanish colonial era. The term "adobo" refers to the cooking method of marinating meat or seafood in vinegar, soy sauce, and spices. Pusit, meaning squid, is the star ingredient in this savory and tangy dish. The Philippines' abundant coastal regions have made squid a staple in local cuisine, and Adobong Pusit has become a beloved classic. Chefs and home cooks alike have put their own spin on the recipe, with variations in the use of ingredients like coconut milk, chili, and black beans. Today, the best versions of Adobong Pusit can be found in traditional Filipino eateries and home kitchens across the country. The key to a perfect Adobong Pusit lies in achieving the ideal balance of flavors, with tender squid and a well-infused marinade. Whether it's enjoyed with steamed rice or as a filling for savory pastries, this dish continues to be a favorite in Filipino cuisine.
