Adobo Chicken

Ingredients
- 2 lbs chicken thighs
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1 cup chicken broth
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon whole peppercorns
- 2 tablespoons cooking oil
Instructions
- In a large bowl, combine 1/2 cup soy sauce, 1/2 cup white vinegar, 1 cup chicken broth, sliced onion, minced garlic, bay leaf, and whole peppercorns.
- Add the chicken thighs to the marinade, making sure they are fully coated. Marinate for at least 30 minutes, or overnight for best results.
- Heat 2 tablespoons of cooking oil in a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later use.
- Sear the chicken thighs in the hot oil until browned on both sides, about 3-4 minutes per side.
- Pour the reserved marinade into the skillet with the chicken. Bring to a boil, then reduce heat to low and simmer, covered, for 30-35 minutes or until the chicken is tender and fully cooked.
- Once the chicken is cooked, remove it from the skillet and set aside. Increase the heat to medium-high and continue to simmer the sauce, stirring occasionally, until it thickens to your desired consistency.
