Adas Polo

Ingredients
- 1 cup basmati rice
- 1/2 cup brown lentils
- 1/4 cup raisins
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground turmeric
- Salt and pepper to taste
- 2 cups of water
Instructions
- Rinse 1 cup of basmati rice in a fine-mesh strainer under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
- In a medium saucepan, combine 1/2 cup of brown lentils with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender but not mushy. Drain any excess water and set aside.
- In a large non-stick skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
- Add the soaked and drained rice to the skillet with the onions. Stir in 1 teaspoon of ground cumin, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of ground turmeric. Season with salt and pepper to taste. Cook for 2-3 minutes, stirring occasionally.
- Spread half of the rice mixture evenly in the bottom of the skillet. Top with the cooked lentils and 1/4 cup of raisins. Cover with the remaining rice mixture.
- Using the handle of a wooden spoon, make 5-6 holes in the rice to allow steam to escape. Cover the skillet with a lid and cook over low heat for 30-35 minutes, or until the rice is fluffy and fully cooked.
- Once the Adas Polo is ready, remove the skillet from the heat and let it sit, covered, for 5 minutes. Gently fluff the rice with a fork to mix the lentils and raisins. Serve hot and enjoy!
