Instructions

  • Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
  • In a large bowl, toss the zucchini slices with 2 tablespoons of olive oil, minced garlic, chopped basil, and salt and pepper to taste.
  • In a separate bowl, mix together the grated Parmesan cheese and breadcrumbs.
  • Arrange half of the zucchini slices in the prepared baking dish. Sprinkle half of the Parmesan and breadcrumb mixture over the zucchini.
  • Drizzle with 1 tablespoon of olive oil. Repeat with the remaining zucchini slices, Parmesan and breadcrumb mixture, and olive oil.
  • Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the zucchini is tender.
  • Allow to cool for a few minutes before serving. Enjoy your delicious zucchini Parmesan gratin!
