Ingredients
- 4 medium zucchinis, spiralized into noodles
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Pour in the crushed tomatoes and add the dried oregano and basil. Season with salt and pepper to taste. Simmer the marinara sauce for 10 minutes, stirring occasionally.
- While the marinara sauce is simmering, spiralize the zucchinis into noodles using a spiralizer.
- In a separate large skillet, heat 1 tablespoon of olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes, or until the noodles are just tender.
- Divide the zucchini noodles among serving plates and top with the marinara sauce.
- Garnish with fresh basil leaves and serve immediately.
