- 2 medium zucchinis, grated and squeezed to remove excess moisture

- 2 green onions, finely chopped
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 2-3 tablespoons olive oil
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed to remove excess moisture
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh mint
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated zucchini, salt, black pepper, dill, feta cheese, Parmesan cheese, green onions, and beaten eggs.
- Mix in the flour until well combined.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and drop it into the skillet, flattening it with a spatula to form a fritter. Cook for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining zucchini mixture, adding more oil to the skillet as needed.
- In a small bowl, combine the Greek yogurt, grated cucumber, garlic, lemon juice, and mint. Season with salt and pepper to taste, and stir until well combined to make the tzatziki sauce.
