Created by: Howcan Team
Ingredients
- 2 medium zucchinis, grated and squeezed to remove excess moisture
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh dill
- 1/4 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 2 green onions, finely chopped
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 2-3 tablespoons olive oil
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed to remove excess moisture
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh mint
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated zucchini, salt, black pepper, dill, feta cheese, Parmesan cheese, green onions, and beaten eggs.
- Mix in the flour until well combined.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and drop it into the skillet, flattening it with a spatula to form a fritter. Cook for 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining zucchini mixture, adding more oil to the skillet as needed.
- In a small bowl, combine the Greek yogurt, grated cucumber, garlic, lemon juice, and mint. Season with salt and pepper to taste, and stir until well combined to make the tzatziki sauce.
- Serve the zucchini fritters hot with the tzatziki sauce on the side for dipping. Enjoy!
Zucchini fritters with tzatziki sauce have a rich history rooted in Greek cuisine. This beloved dish features crispy fritters made from grated zucchini, mixed with herbs and feta cheese, then fried to golden perfection. The accompanying tzatziki sauce, a creamy blend of yogurt, cucumber, garlic, and dill, adds a refreshing and tangy contrast. Renowned Greek chefs and tavernas have perfected this recipe, with variations found across the Mediterranean. The key to achieving the best zucchini fritters lies in properly draining the zucchini to remove excess moisture, ensuring a crispy texture. For a twist, some chefs incorporate mint or serve the fritters with a squeeze of lemon. Today, the best versions of this dish can be savored in traditional Greek tavernas or modern Mediterranean restaurants.
