Ingredients
- 4 medium zucchinis, sliced into 1/4-inch rounds
- 4 medium tomatoes, sliced into 1/4-inch rounds
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large bowl, toss the zucchini and tomato slices with 1/4 cup of olive oil, minced garlic, dried thyme, dried oregano, salt, and pepper.
- Arrange the zucchini and tomato slices in the prepared baking dish, alternating and overlapping them in rows.
- In a small bowl, mix together the grated Parmesan cheese, breadcrumbs, and chopped parsley. Sprinkle this mixture evenly over the zucchini and tomato slices.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the vegetables are tender.
