Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large bowl, toss the zucchini and tomato slices with 1/4 cup of olive oil, minced garlic, dried thyme, dried oregano, salt, and pepper.
  • Arrange the zucchini and tomato slices in the prepared baking dish, alternating and overlapping them in rows.
  • In a small bowl, mix together the grated Parmesan cheese, breadcrumbs, and chopped parsley. Sprinkle this mixture evenly over the zucchini and tomato slices.
  • Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the vegetables are tender.
