Ingredients
- 4 cups of sliced zucchini
- 1/2 cup of chopped onion
- 1/4 cup of butter
- 2 eggs
- 1 cup of shredded cheddar cheese
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh parsley
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of dried oregano
- 1/4 teaspoon of dried basil
- 1/4 cup of bread crumbs
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, melt 1/4 cup of butter over medium heat. Add 4 cups of sliced zucchini and 1/2 cup of chopped onion. Cook and stir until the zucchini is tender, about 5 minutes.
- In a large bowl, beat 2 eggs. Stir in 1 cup of shredded cheddar cheese, 1/2 cup of grated Parmesan cheese, 1/4 cup of chopped fresh parsley, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, 1/4 teaspoon of garlic powder, 1/4 teaspoon of dried oregano, and 1/4 teaspoon of dried basil.
- Add the cooked zucchini and onion to the cheese mixture and stir to combine. Pour into the prepared baking dish.
- Sprinkle 1/4 cup of bread crumbs over the top of the casserole.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
- Allow to cool for a few minutes before serving. Enjoy!
