Ingredients
- 1 cup wild rice
- 2 cups chicken or vegetable broth
- 1/2 cup unsalted butter
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced mushrooms
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 cup chopped pecans
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine 1 cup of wild rice with 2 cups of chicken or vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 45 minutes, or until the rice is tender and the liquid is absorbed.
- In a large skillet, melt 1/2 cup of unsalted butter over medium heat. Add 1 cup of diced onion, 1 cup of diced celery, and 1 cup of diced mushrooms. Cook until the vegetables are softened, about 5-7 minutes.
- Add 2 cloves of minced garlic, 1 teaspoon of dried thyme, and 1 teaspoon of dried sage to the skillet. Cook for an additional 2 minutes, stirring frequently.
- Stir in the cooked wild rice and 1/2 cup of chopped pecans. Season with salt and pepper to taste. Cook for another 5 minutes to allow the flavors to meld together.
- Remove the wild rice stuffing from heat and transfer to a serving dish. Serve hot as a delicious side dish for your holiday meal.
