Walnut Baklava

Ingredients
- 1 pound phyllo dough
- 1 cup unsalted butter, melted
- 3 cups walnuts, finely chopped
- 1 teaspoon ground cinnamon
- 1 cup granulated sugar
- 1 cup water
- 1 cup honey
- 1 teaspoon vanilla extract
- 1 cinnamon stick (optional)
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- In a medium bowl, mix together the chopped walnuts, 1 teaspoon of ground cinnamon, and 1/2 cup of sugar.
- Place a sheet of phyllo dough into the prepared baking dish and brush with melted butter. Repeat with 7 more sheets of phyllo, brushing each with butter.
- Sprinkle a thin layer of the walnut mixture over the phyllo. Place 2 sheets of phyllo on top, brushing each with butter, and sprinkle with the walnut mixture. Repeat this process until all the walnut mixture is used, reserving 8 sheets of phyllo for the top.
- Using a sharp knife, cut the baklava into diamond or square shapes all the way to the bottom of the dish.
- Bake in the preheated oven for 45-50 minutes, or until golden brown and crisp.
- While the baklava is baking, combine the remaining 1/2 cup of sugar, 1 cup of water, 1 cup of honey, 1 teaspoon of vanilla extract, and a cinnamon stick in a saucepan. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
- Remove the cinnamon stick from the syrup and pour the hot syrup over the hot baklava. Let cool completely before serving.
