  • 1 cup unsalted butter, melted
  • 3 cups walnuts, finely chopped
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup honey
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick (optional)

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
  • In a medium bowl, mix together the chopped walnuts, 1 teaspoon of ground cinnamon, and 1/2 cup of sugar.
  • Place a sheet of phyllo dough into the prepared baking dish and brush with melted butter. Repeat with 7 more sheets of phyllo, brushing each with butter.

  • Bake in the preheated oven for 45-50 minutes, or until golden brown and crisp.
  • While the baklava is baking, combine the remaining 1/2 cup of sugar, 1 cup of water, 1 cup of honey, 1 teaspoon of vanilla extract, and a cinnamon stick in a saucepan. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
  • Remove the cinnamon stick from the syrup and pour the hot syrup over the hot baklava. Let cool completely before serving.

Walnut baklava is a delectable Middle Eastern dessert with a rich history dating back to the Ottoman Empire. This sweet treat is made with layers of flaky phyllo pastry, butter, and a generous filling of crushed walnuts, all soaked in a fragrant honey syrup. Renowned chefs like Yotam Ottolenghi have put their own modern twist on this classic recipe, incorporating unique flavors and textures. Today, the best walnut baklava can be found in Istanbul, Turkey, where skilled pastry chefs meticulously layer the phyllo and nuts to achieve the perfect balance of crunch and sweetness. The key to a great walnut baklava lies in achieving a crispy, golden-brown pastry and a luscious, nutty filling. For a unique twist, some chefs add a hint of cinnamon or cardamom to the syrup for an extra layer of flavor. Whether enjoyed as a decadent dessert or a special treat with tea, walnut baklava continues to captivate food enthusiasts around the world.
