  • 8 oz pasta (such as penne or rigatoni)

  • Fresh basil leaves, for garnish
  • Freshly grated Parmesan cheese, for serving

  • 1 pint cherry tomatoes

  • 8 oz pasta (such as penne or rigatoni)
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Preheat the oven to 400°F (200°C).
  • Place the block of feta cheese in the center of a baking dish. Surround the feta with cherry tomatoes. Drizzle with 2 tbsp of olive oil and season with salt and pepper.
  • Bake for 30 minutes, or until the feta is soft and the tomatoes are bursting.
  • While the feta and tomatoes are baking, cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • In a large skillet, heat the remaining 2 tbsp of olive oil over medium heat. Add the minced garlic and red pepper flakes, and cook for 1-2 minutes until fragrant.
  • Add the roasted feta and tomatoes to the skillet, and use a fork to mash the feta and mix it with the tomatoes. Add the cooked pasta and toss to combine, adding pasta water as needed to create a creamy sauce.
  • Season with salt and pepper to taste.
  • Serve the pasta in bowls, garnished with fresh basil leaves and a generous sprinkle of freshly grated Parmesan cheese.
