Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/2 cup finely chopped onion
- 1/2 cup grated carrots
- 1/2 cup chopped bell pepper
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 burger buns
- Toppings of your choice (lettuce, tomato, avocado, etc.)
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
- Add 1/2 cup bread crumbs, 1/2 cup onion, 1/2 cup carrots, 1/2 cup bell pepper, 1/4 cup parsley, 1 teaspoon garlic powder, 1 teaspoon cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the bowl with the mashed beans.
- Mix all the ingredients together until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Heat a non-stick skillet over medium heat and lightly coat with oil or cooking spray.
- Cook the veggie patties for 4-5 minutes on each side, or until golden brown and heated through.
- Toast the burger buns in the skillet for 1-2 minutes, until lightly browned.
- Assemble the veggie burgers with your choice of toppings and enjoy!
