  • 1/2 cup chopped bell pepper

  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 burger buns
  • Toppings of your choice (lettuce, tomato, avocado, etc.)

  • 1/4 teaspoon black pepper
  • 4 burger buns
  • Toppings of your choice (lettuce, tomato, avocado, etc.)

Instructions

  • In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
  • Add 1/2 cup bread crumbs, 1/2 cup onion, 1/2 cup carrots, 1/2 cup bell pepper, 1/4 cup parsley, 1 teaspoon garlic powder, 1 teaspoon cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the bowl with the mashed beans.
  • Mix all the ingredients together until well combined.
  • Divide the mixture into 4 equal portions and shape each portion into a patty.
  • Heat a non-stick skillet over medium heat and lightly coat with oil or cooking spray.
  • Cook the veggie patties for 4-5 minutes on each side, or until golden brown and heated through.
  • Toast the burger buns in the skillet for 1-2 minutes, until lightly browned.
  • Assemble the veggie burgers with your choice of toppings and enjoy!
