Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center. Place the zucchini halves on a baking sheet.
  • In a large bowl, mix together 1 cup of cooked quinoa, 1/2 cup diced onion, 1/2 cup diced bell pepper, 1 cup diced tomatoes, 1/2 cup crumbled feta cheese, 2 cloves minced garlic, 1 teaspoon dried oregano, 1/2 teaspoon dried basil, and salt and pepper to taste.
  • Spoon the quinoa mixture into the hollowed-out zucchini halves, pressing down gently to pack the filling in.
  • Drizzle the stuffed zucchinis with 2 tablespoons of olive oil and sprinkle with additional salt and pepper if desired.
  • Bake in the preheated oven for 30-40 minutes, or until the zucchinis are tender and the filling is heated through.
