Ingredients
- 1 head of cauliflower, riced
- 2 tablespoons olive oil
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- 1 cup canned kidney beans, drained and rinsed
- 1 cup frozen okra
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a food processor, pulse the cauliflower florets until they resemble rice. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes.
- Stir in the diced tomatoes, vegetable broth, kidney beans, and okra. Bring to a simmer.
- Add the cauliflower rice, paprika, cayenne pepper, thyme, and oregano. Season with salt and pepper to taste. Stir well to combine.
- Cover and cook for 10-15 minutes, or until the cauliflower rice is tender and the flavors have melded together.
- Garnish with chopped fresh parsley before serving.
