Ingredients
- 1 cup of vegetarian sausage, sliced
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 bell peppers, chopped
- 2 tomatoes, diced
- 2 cups of cooked black beans
- 1 cup of vegetable broth
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- Cooked rice, for serving
- Chopped fresh cilantro, for garnish
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add 1 cup of sliced vegetarian sausage and cook until browned, about 5 minutes.
- Add 1 chopped onion and 3 minced garlic cloves, and cook until softened, about 5 minutes.
- Stir in 2 chopped bell peppers and 2 diced tomatoes, and cook for another 5 minutes.
- Add 2 cups of cooked black beans, 1 cup of vegetable broth, 1 teaspoon of cumin, and 1 teaspoon of paprika. Season with salt and pepper to taste.
- Simmer the feijoada for 30 minutes, stirring occasionally.
- Serve the vegetarian sausage feijoada over cooked rice and garnish with chopped fresh cilantro.
