Ingredients
- 1 cup dried lentils
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tablespoon taco seasoning

- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn tortillas
- Toppings: shredded lettuce, diced tomatoes, avocado, salsa, and lime wedges
Instructions
- Rinse the lentils and place them in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender and the liquid is absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and diced bell pepper, and cook for an additional 2-3 minutes.
- Stir in the cooked lentils, taco seasoning, cumin, paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through and the flavors are well combined.
- While the lentil mixture is cooking, warm the corn tortillas in a dry skillet over medium heat for 1-2 minutes on each side.
- To assemble the tacos, spoon the lentil mixture onto each tortilla and top with shredded lettuce, diced tomatoes, avocado, and salsa. Serve with lime wedges on the side.
