  • 2 tablespoons of vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 1/2 cup of sliced carrots
  • 1/4 cup of teriyaki sauce
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame seeds (optional)
  • Cooked rice or noodles for serving

  • 1 teaspoon of sesame seeds (optional)
  • Cooked rice or noodles for serving

Instructions

  • In a large bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the coated tofu to the skillet and cook for 5-7 minutes, turning occasionally, until golden and crispy. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil and stir-fry the red and yellow bell peppers, broccoli, snap peas, and carrots for 3-4 minutes, or until the vegetables are tender-crisp.
  • Return the cooked tofu to the skillet with the vegetables.
  • Pour in 1/4 cup of teriyaki sauce and 1 tablespoon of soy sauce. Stir to combine and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the tofu and vegetables.
  • Sprinkle with sesame seeds, if desired.
  • Serve the vegetable teriyaki tofu over cooked rice or noodles. Enjoy!
