Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 2 tablespoons of cornstarch
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 1/2 cup of sliced carrots
- 1/4 cup of teriyaki sauce
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame seeds (optional)
- Cooked rice or noodles for serving
Instructions
- In a large bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the coated tofu to the skillet and cook for 5-7 minutes, turning occasionally, until golden and crispy. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil and stir-fry the red and yellow bell peppers, broccoli, snap peas, and carrots for 3-4 minutes, or until the vegetables are tender-crisp.
- Return the cooked tofu to the skillet with the vegetables.
- Pour in 1/4 cup of teriyaki sauce and 1 tablespoon of soy sauce. Stir to combine and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the tofu and vegetables.
- Sprinkle with sesame seeds, if desired.
