Ingredients
- 8 oz ramen noodles
- 14 oz firm tofu, drained and cubed
- 4 cups vegetable broth
- 2 cups sliced shiitake mushrooms
- 1 cup sliced carrots
- 1 cup snow peas
- 1/2 cup sliced green onions
- 4 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp chili flakes
- Salt and pepper to taste
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the ramen noodles and cook according to package instructions. Drain and set aside.
