  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of dried oregano
  • 1/4 teaspoon of dried basil

Instructions

  • Preheat the oven to 375 degrees F.
  • Cook the manicotti shells according to the package instructions. Drain and set aside to cool.
  • In a large mixing bowl, combine 2 cups of ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, 1 egg, chopped spinach, diced mushrooms, diced onion, minced garlic, salt, black pepper, dried oregano, and dried basil. Mix well.
  • Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
  • Using a spoon or piping bag, fill each manicotti shell with the cheese and vegetable mixture and place them in the baking dish.
  • Pour the remaining marinara sauce over the filled manicotti shells, then sprinkle with the remaining mozzarella cheese and Parmesan cheese.
  • Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
