  • 1/2 cup of diced tomatoes
  • 1/2 cup of sliced cucumbers
  • 1/4 cup of sliced red onions
  • 1/4 cup of sliced bell peppers
  • 1/4 cup of crumbled feta cheese
  • Salt and pepper to taste

Instructions

  • Lay out the whole wheat tortillas on a clean surface.
  • Spread 1/4 cup of hummus onto each tortilla, leaving a 1-inch border around the edges.
  • Evenly distribute the shredded lettuce, diced tomatoes, sliced cucumbers, red onions, and bell peppers on top of the hummus on each tortilla.
  • Sprinkle the crumbled feta cheese over the vegetables on each tortilla.
  • Season with salt and pepper to taste.
  • Fold the bottom edge of each tortilla up over the filling, then fold in the sides, and roll tightly to enclose the filling.
  • Slice the wraps in half diagonally and serve immediately, or wrap in parchment paper and refrigerate until ready to serve.
