  • 1 tablespoon of vegetable oil
  • 1 teaspoon of grated ginger

Instructions

  • In a large non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.
  • Add the mixed vegetables to the skillet and cook for 3-4 minutes until they are tender.
  • Push the vegetables to one side of the skillet and add the cooled rice to the other side. Cook for 2-3 minutes, stirring occasionally to prevent sticking.
  • Add the cooked tofu back to the skillet and mix everything together.
  • Drizzle the soy sauce and sesame oil over the fried rice and tofu. Stir to combine and cook for an additional 2-3 minutes.
