  • 1 bell pepper, diced

  • 1 cup of mushrooms, sliced
  • 1 24-oz jar of marinara sauce
  • 1 cup of vegan mozzarella cheese, shredded
  • 1/4 cup of nutritional yeast
  • 1/4 cup of fresh basil, chopped
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cook the ziti pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic, diced bell pepper, zucchini, and sliced mushrooms to the skillet. Cook for another 5-7 minutes, or until the vegetables are tender.
  • Stir in the marinara sauce and let it simmer for 5 minutes. Season with salt and pepper to taste.
  • In a large mixing bowl, combine the cooked ziti pasta, vegetable marinara sauce, vegan mozzarella cheese, nutritional yeast, and chopped basil. Mix until everything is well combined.
  • Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle additional vegan mozzarella cheese on top if desired.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
