  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced

  • 1 pound of Italian sausage, casings removed
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of dried thyme

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a medium saucepan, bring the chicken broth to a boil. Stir in 1 cup of rice, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
  • Add the diced bell pepper, zucchini, and sliced mushrooms to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
  • Push the vegetables to the side of the skillet and add the Italian sausage. Cook, breaking it apart with a spoon, until browned and cooked through.
  • Stir in the cooked rice, dried oregano, dried thyme, salt, and pepper. Mix well to combine all the ingredients.
  • Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Allow the casserole to cool for a few minutes before serving. Enjoy!
