Vegetable and Sausage Rice Casserole

Ingredients
- 1 cup of long-grain white rice
- 2 cups of chicken broth
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup of sliced mushrooms
- 1 pound of Italian sausage, casings removed
- 1 teaspoon of dried oregano
- 1/2 teaspoon of dried thyme
- Salt and pepper to taste
- 1 cup of shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium saucepan, bring the chicken broth to a boil. Stir in 1 cup of rice, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
- Add the diced bell pepper, zucchini, and sliced mushrooms to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Push the vegetables to the side of the skillet and add the Italian sausage. Cook, breaking it apart with a spoon, until browned and cooked through.
- Stir in the cooked rice, dried oregano, dried thyme, salt, and pepper. Mix well to combine all the ingredients.
- Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Allow the casserole to cool for a few minutes before serving. Enjoy!
