Instructions

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes, until the onion is translucent.
  • Add the diced sweet potatoes to the pot and sauté for another 5 minutes, stirring occasionally.
  • Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, or until the sweet potatoes are tender.
  • Once the sweet potatoes are tender, turn off the heat and let the mixture cool for a few minutes.
  • Using an immersion blender, blend the soup until smooth and creamy.
  • Stir in the coconut milk, ground cumin, and ground cinnamon. Season with salt and pepper to taste.
  • Turn the heat back on to low and let the soup simmer for an additional 5 minutes, stirring occasionally.
