Ingredients
- 1 cup of vital wheat gluten
- 1/4 cup of nutritional yeast
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of dried oregano
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of salt
- 1/2 cup of vegetable broth
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- 1 tablespoon of tomato paste
- 4 pita bread rounds
- 1 cup of shredded lettuce
- 1 cup of diced tomatoes
- 1/2 cup of sliced red onion
- 1/2 cup of dairy-free tzatziki sauce
Instructions
- In a large mixing bowl, combine 1 cup of vital wheat gluten, 1/4 cup of nutritional yeast, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of dried oregano, 1/2 teaspoon of dried thyme, 1/2 teaspoon of smoked paprika, and 1/2 teaspoon of salt.
- In a separate bowl, whisk together 1/2 cup of vegetable broth, 2 tablespoons of soy sauce, 1 tablespoon of olive oil, and 1 tablespoon of tomato paste.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough for a few minutes, then divide it into 4 equal portions and shape each portion into a log.
- Wrap each log in aluminum foil and steam for 20 minutes.
- After steaming, heat a non-stick skillet over medium heat and unwrap the seitan logs. Sauté them in the skillet for 3-4 minutes on each side until browned.
- Warm the pita bread rounds in the skillet for 1-2 minutes on each side.
- To assemble the gyros, place a generous amount of shredded lettuce, diced tomatoes, and sliced red onion on each pita bread round. Add a seitan log to each gyro and drizzle with dairy-free tzatziki sauce.
- Fold the pita bread over the filling and serve the vegan gyros immediately.
