  • 4 whole wheat tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/2 cup tahini sauce

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 4 whole wheat tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/2 cup tahini sauce

Instructions

  • In a food processor, combine 1 can of chickpeas, 1/2 cup parsley, 1/4 cup red onion, 3 cloves of garlic, 2 tsp cumin, 1 tsp coriander, 1/4 tsp cayenne pepper, 1/2 tsp salt, and 1/4 tsp black pepper. Pulse until mixture is coarsely ground.
  • Transfer the mixture to a bowl and stir in 2 tbsp of flour. Form the mixture into 12 small patties.
  • Heat 2 tbsp of olive oil in a large skillet over medium heat. Cook the falafel patties for 3-4 minutes on each side, until golden brown and crispy. Remove from the skillet and set aside.
  • Warm the whole wheat tortillas in a dry skillet for 1-2 minutes on each side.
  • To assemble the wraps, place 3 falafel patties in the center of each tortilla. Top with shredded lettuce, diced tomatoes, diced cucumber, and sliced red onion. Drizzle with tahini sauce.
  • Fold in the sides of the tortilla and then roll it up tightly, tucking in the filling as you go.
  • Serve the vegan falafel wraps immediately, or wrap them in foil to keep warm for later. Enjoy!
