Vegan BBQ Jackfruit Sandwich

Ingredients
- 2 cans of young green jackfruit in brine, drained and rinsed
- 1 cup of BBQ sauce
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of cumin
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 4 hamburger buns
- 1 cup of coleslaw (optional)
Instructions
- Using your hands or a fork, shred the jackfruit into small pieces, removing any seeds or tough core pieces.
- In a large skillet, heat the olive oil over medium heat. Add the shredded jackfruit and sauté for 5 minutes.
- Add the garlic powder, onion powder, smoked paprika, cumin, cayenne pepper, salt, and pepper to the skillet. Stir to combine and cook for an additional 2 minutes.
- Pour the BBQ sauce over the jackfruit and stir to coat. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
- While the jackfruit is simmering, lightly toast the hamburger buns in a toaster or on a skillet.
- Once the jackfruit is tender and the sauce has thickened, remove from heat.
- Assemble the sandwiches by placing a generous amount of the BBQ jackfruit mixture on the bottom half of each bun. Top with coleslaw if desired, and cover with the top half of the bun.
- Serve the sandwiches immediately and enjoy!
