Ingredients

  • 4 veal cutlets, pounded to 1/4 inch thickness
  • 1 cup of breadcrumbs
  • 1/2 cup of grated Parmesan cheese
  • 2 eggs, beaten
  • 1 cup of marinara sauce
  • 1 cup of shredded mozzarella cheese
  • 1/4 cup of olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Preheat the oven to 400 degrees F. Grease a baking dish with olive oil.
  • In a shallow dish, combine 1 cup of breadcrumbs and 1/2 cup of grated Parmesan cheese.
  • Dip each veal cutlet into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
  • Heat 1/4 cup of olive oil in a large skillet over medium-high heat. Add the breaded veal cutlets and cook for 3-4 minutes on each side, or until golden brown. Remove from the skillet and place in the prepared baking dish.
  • Top each cutlet with marinara sauce and shredded mozzarella cheese.
  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
