- 4 boneless, skinless chicken breasts
- 1 cup farro
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, diced

- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook for 2-3 minutes, or until the onion is translucent and the garlic is fragrant.
- Stir in the farro, diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the farro is tender and the liquid is absorbed.
- Return the cooked chicken to the skillet, nestling it into the farro mixture. Cook for an additional 5 minutes to heat the chicken through.
- Sprinkle the crumbled feta cheese over the skillet and serve hot. Enjoy!
