Ingredients
- 2 pounds ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 5 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup ketchup
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine 2 pounds of ground turkey, 1/2 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 cup chopped fresh parsley, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 small finely chopped onion and 3 cloves of minced garlic. Cook until the onion is soft, about 5 minutes.
- Add 5 cups of chopped fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- Flatten the turkey mixture into a 9x5 inch rectangle on a piece of parchment paper. Spread the spinach mixture evenly over the turkey, leaving a 1-inch border around the edges. Sprinkle 1/2 cup of crumbled feta cheese over the spinach.
- Starting from the short end, carefully roll up the turkey, using the parchment paper to help. Press the edges to seal and place seam side down in a baking dish.
- Brush the top of the meatloaf with 1/4 cup of ketchup.
- Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). Let the meatloaf rest for 10 minutes before slicing and serving.
